I recently hit on a variation of a fried fish recipe you might want to try. I was rummaging trough cabinets when I discovered a bottle of pina colada mix, & thought "hmmmm". Instead of using an eggwash, I dipped fillets in the mix, then into seasoned flour, then in the mix again, then in Panko flakes. Nice touch. The coconut & pineapple flavor was noticeable, but not overpowering.
