Yo, Duff!

I recently hit on a variation of a fried fish recipe you might want to try. I was rummaging trough cabinets when I discovered a bottle of pina colada mix, & thought "hmmmm". Instead of using an eggwash, I dipped fillets in the mix, then into seasoned flour, then in the mix again, then in Panko flakes. Nice touch. The coconut & pineapple flavor was noticeable, but not overpowering.

So now I just need to go catch me some fish! If the law permits anyhow... I think we're back in season for grouper?

Not yet Duff, Crabtree is making you wait till April 1 although Red Grouper opens March 15 if you want to run 35 miles for 1 fish:mad: :mad:

Sounds like a good excuse to visit the other coast. Hopefully the sharks have thinned out some over there...
